Directions
  1. Preheat oven 350°F. Evenly coat an 8 x 8 light-colored baking pan with non-stick cooking spray.
  2. In a medium mixing bowl, whisk to combine egg, sugar and vanilla.
  3. Add cinnamon, orange juice, carrots, Country Biscuit Mix and walnuts; gently stir batter.
  4. Spread batter into prepared pan.
  5. Bake until done, approximately 20-25 minutes.
  6. With an electric mixer, beat cream cheese, confectioners’ sugar, vanilla and milk, about 2-3 minutes.
  7. To adjust the consistency of the frosting, additional confectioners’ sugar will thicken the frosting and additional milk will make a thinner frosting.
  8. Frost cake when cooled.
