Directions
  1. Add the vegetable oil to a large skillet over medium high heat.
  2. Add the onion, bell peppers and jalapeno to the pan and sauté for 3-4 minutes.
  3. Add the rice to the pan and sauté for 1-2 minutes.
  4. Slowly stir in the water, turn the heat to medium low and cook for 15 minutes or until rice is cooked.
  5. Add the black beans and taco seasoning to the pan, stir and heat for 2 minutes.
  6. Remove the pan from the heat and portion onto a plate and serve with an over medium cooked egg.
